I recently created a video on the process of deleting a user from Google Apps which includes archiving data for future reference.
The following two videos detail the process of retrieving data backed up using Google Takeout application.
The first video shows the process of recovering and restoring the emails using Mozilla Firefox.

The second video shows how to recover the Gmail contacts and Google Drive documents. I didn’t bother with the Calendar restore as it would be rare that you would need access to calendar history.

These processes of archiving and restoring can also be useful when you migrate data from One Google Apps user to another particularly if they are in separate Google Apps domains.
